If they are packed by a reputable company, properly nitrogen flushed, according to industry standards, are indivdually wrapped, use a good quality foil; they will last way beyond the expiration date which is generally two years from production. Since we archive our production runs over the years, we sample "expired" pods time to time to see what happens. We have had pods that retained their taste profile 50% past their expiration date.
Based on our experience, pods should mature a little bit before being consumed. Think of your coffee as wine, you dont want to drink it out of the press. The importance is not having storage conditions such that there are extreme temperature shifts.
In some restaurant clients, we sometimes see that the staff opens the pods in advance of utilisation. This is not a good practice as one looses all of the advantage of the nitrogen concerving atmosphere of the individual foils. If not used quickly, the coffee will "vent out" and eventually become stale. This was one of the problems in the early pods that were bulk packaged in loose aluminium bags or tins.
